Original recipe comes from the blog of my amazing friend TheWellnessJunction. I just added one of my favourites ingredients, turmeric!
Makes 3-4 pancakes.
- 1 large / 2 small ripe banana(s)
- 2 organic eggs (I used 3 egg yolks as cannot have egg whites)
- 1/3 cup coconut flour (or buckwheat flour)
- 1 tsp turmeric powder
Firstly, mash banana(s), add eggs (or only yolks like me) and turmeric and mix well. Then add coconut flour, stir and make sure it is well combined. If you have a hand blender, you can use it to mix all ingredients.
Heat up coconut oil on the large frying pan, scoop 1 big tablespoon of the mixture and flatten it with your spoon. Then flip them to the other side. Do not fry pancakes too long as they get brown very quickly; there is no need to fry them for long time.
Serve warm with your favourite pancake toppings! I love them with blueberries and some romaine lettuce or pea shoots.
