It is quite difficult when you love desserts and any kind of sugar has to be limited. But that is when creativity starts 😉 This simple and delicious recipe is so easy and can be prepared in advance.
Makes 2 portions.
- 1 avocado
- ½ cup full fat coconut milk
- 1 tsp lemon juice
- 4 TBS raw cacao powder
- about 1 tsp vanilla extract or powder
- blueberries (or any of your favourite fruits)
- toasted coconut flakes
- cacao nibs (I just have to have them here 😉 )
Blend coconut milk, avocado, lemon juice, stevia and cacao powder until smooth. Add cacao nibs – if using. Transfer to container with a lid (I use mason jars) and refrigerate for at least 2 hours, desirably overnight. Serve topped with favourite fruits and toasted coconut flakes.
