COCONUT BLACK RICE PUDDING

img_1432I am so not prepared for coming cold seasons, especially that nowadays they last so long. It is only autumn and I know it still can be warm and sunny, so I keep my fingers and toes crossed for this to happen😉

It is raining today and I think only delicious food can save me! I think you may like all these flavours which will transfer you somewhere sunny!

Makes 2 portions

INGREDIENTS

  • ½ cup of black rice (I used Organic Sprouted Black GABA Rice by Minvita)
  • 1 can of full fat coconut milk (reserve some for garnish)
  • 1 TBS coconut sugar
  • 1/3 cup coconut flakes
  • Your favourite fruits for topping:  pineapple, passion fruit, berries, kiwi

 

METHOD

Cook the black rice according to the packet instructions replacing water with coconut milk. Time of cooking may vary depending on the rice.

Meanwhile, toast coconut flakes in dry frying pan until lightly golden brown and set aside. Then prepare all the fruit that you would like to use.

When rice is ready, add remaining coconut milk and coconut sugar, stir well.

Then divide the mixture between two bowls, top with fruits, toasted coconut and then you are ready to take your journey! Enjoy!
