My week on a raw diet started yesterday. It is a project for my course and it is challenging! The key thing is to plan and organise everything as when you feel hungry, there has to be something to eat quickly. Also, having good kitchen equipment is important and space, space, space… My fridge is so full!
And now food… I have just received request for a raw hummus from my lovely friend. Recipe is so easy and so much quicker that making normal one (I still love it though and missing it!).
- 1 medium or large courgette
- 1 clove of garlic (minced)
- 3 heaped TBS tahini
- 1-2 TBS lemon juice
- pink salt
- extra virgin olive oil (optional)
Wash courgette, cut in pieces. Blend it together with garlic, tahini and lemon juice until smooth. Add salt.
I used the whole courgette – that is why the colour is green, but you can remove it if you want.
Also, add more or less garlic and lemon.
