CHICKPEA FLATBREADS or PANCAKES

Eating rye bread every day became boring so decided to find something to replace it. Being huge fan of gram flour, the choice was made and I served those simple flatbreads for my breakfast topping them with green leaves, avocado and colourful bell peppers.

INGREDIENTS:

  • 2 cups chickpea/ gram flour
  • 14 tsp pink salt
  • 2 TBS black onion seeds
  • 1 3cup cold water
  • coconut oil (odourless) for frying

METHOD:

Mix flour with salt and black onion seeds in medium bowl. Then make a well in the flour mixture and start pouring cold water slowly stirring at the same time.

Set aside for at least 40 minutes. If you could leave it overnight in the fridge, that would be the best.

Melt oil on the frying pan (whichever size you wish). Pour some batter onto the pan and  tilt it to move the mixture around for a thin and even layer. Fry for few minutes on both sides (until lightly golden brown).

Make a pile of those and, in the meantime, prepare your favourite toppings.
