Buckwheat & chickpea pancakes with sautéed mushrooms & spinach

Seeing those lovely green pancakes of Green Kitchen Stories, the idea was born for my dinner. Once, I made green pancakes with matcha tea but blending pancake batter with some leafy vegetables… That was my first time and the result was amazing!

INGREDIENTS for mushroom filling:

  • 2 TBS clarified butter
  • 1 red onion, finely chopped
  • 10 chestnut mushrooms, finely sliced
  • pinch of Himalayan salt
  • 2 TBS balsamic glaze


Melt the butter and sauté onion and mushrooms until done. Add salt and balsamic glaze, mix well.

INGREDIENTS for roasted vine tomatoes:

  • bunch of small tomatoes
  • extra virgin olive oil


Preheat the oven to 200 C. Line baking tray with parchment paper. Wash tomatoes, dry them and arrange on the tray. Roast for about 10-15 mins or until ready, drizzle with olive oil.

INGREDIENTS for spinach filling:

  • 2 packs of spinach, washed
  • 10 garlic cloves, crushed
  • clarified butter for frying
  • pinch of Himalayan salt
  • toasted sunflower seeds (I used about ⅓ cup)


Melt butter in the large frying pan. Add spinach and sauté until water evaporated. Add crushed garlic, seeds and season to taste.

INGREDIENTS for pancakes (makes 7-8 Recipe adapted from here):

  • 1 cup buckwheat flour
  • ½ chickpea flour
  • 3 large eggs
  • 2 cups plant milk (I use almond milk)
  • 1 cup H2O
  • 1 TBS melted coconut oil or clarified butter (more for frying)
  • a pinch of pink salt
  • 2 handfuls fresh spinach, washed
  • 2 TBS oregano


Mix all pacakes’ ingredients in a large bowl using blender until smooth and green. Place the batter in the fridge for about 30 minutes.

Heat the oil or butter on the  frying pan. When melted, pour about ⅓ cup of the batter and tilt the pan in circles until the batter is on the whole surface of the pan. Fry on a medium gas until golden brown on both sides.


Arrange everything on the plates and in the bowls on already set up table. And just enjoy with your family or anyone you want to share that amazing meal 🙂
