I really surprised myself with that great recipe in the morning. I loved these pancakes as they were thick and filling. They gave me cosy and warm feeling of pleasure. And I loved combination of apples and cinnamon!
- 1 ½ cup millet
- 2 cups wholegrain spelt flour
- 1 egg
- 1 cup any nut milk
- 1 TBS xylitol or 2 TBS maple syrup or 2 TBS agave nectar
- 2 grated apples
- 1 tsp cinnamon
- pinch of Himalayan salt
- coconut oil for frying
- cacao nibs for sprinkling or you can add them into the batter
Mix all wet ingredients (despite of apples) in one bowl, and all dry – in another bowl. Transfer wet mixture to dry one and mix very well. Then add grated apples and mix again.
If the batter is to thick, add more milk. If too liquify, add more flour.
Heat up coconut oil on a large frying pan. Pour about 2 TBS of the batter on the pan. Fry on a medium gas until golden brown on both sides.
Sprinkle with cacao nibs. Ta-da! Enjoy!
