Pecan tart

Pecans are one of my favourite nuts. Making a tart with them was something I really wanted to try. I did not have maple syrup and I think it would give just a little better touch with the existing taste… so use maple syrup 🙂

Anyway, I enjoyed it very much and my friends too!

For the crust:

  • 1 cup of almonds
  • 1 cup of buckwheat flour
  • 2 TBS agave syrup
  • 6 tablespoons of coconut oil
  • 2 teaspoons of cinnamon
  • 10 dates
  • 2 teaspoons of cinnamon
  • ½ tsp pink salt

For the middle part:

  • 1 cup of pecans
  • ¼ cup H2O
  • 170g almond butter
  • 12 dates
  • 4 TBS agave syrup

For the topping:

  • 1 cup pecans
  • 2 TBS pure maple syrup or agave syrup
  • 1 tsp cinnamon


Preheat the oven to 180C.

First, make the crust. Process the almonds in a food processor until they form a flour. Then add the buckwheat flour, cinnamon, salt, agave syrup, dates and coconut oil and process until they form a sticky mixture.

Spread a little of coconut oil on the bottom of baking pie dish. Then spread the mixture using your hands and pressing firmly. Bake for about 15 minutes or until the top is golden  brown. When ready, leave on the side.

In the meantime, make the middle layer. Crush pecans into small pieces using the food processor. Then add almond butter, dates and agave syrup. At the end, slowly pour water while mixing. Put to the fridge until using.

Now make the topping. Mix pecans with cinnamon and agave syrup on the baking tray. Bake for 5-8 minutes until golden brown.

And finally, spread the middle layer all over the base and add roasted pecans on the top. Leave to set for about 1 hour.
