Millet & chestnut pancakes with vanilla

I admire pancakes so much. I love these golden brown colours after pan frying, sweetish smell…mmmm…

This time I made gluten free pancakes. I used millet flour and chestnut one and I loved it!

INGREDIENTS:

  • ½ cup millet flour
  • ¼ cup chestnut flour
  • 2 TBS cornstarch
  • pinch of himalayan salt
  • 1 cup of any nut milk
  • 2 eggs
  • ¼ tsp vanilla powder
  • 2 TBS agave syrup
  • extra virgin coconut oil for frying

METHOD:

Mix all dry ingredients in one bowl and all wet in another one. Then transfer wet to dry, mix well. Put to the fridge for about an hour.

Heat up coconut oil on a medium frying pan. Pour batter (about ¼ cup) on the pan, fry until it starts bubbling and it looks set, then gently flip the pancake. Fry for few minutes on another side on medium gas.

Serve with anything you like!
