Banana millet cookies

Hello everyone! I am back after so long break. I have had great time and I am ready to try new recipes, enjoy baking and cooking again… and still stay healthy!

These biscuits are a little different than my usual ones. They are a little chewy and rich in flavour. And moreover, they are not very sweet as there is no sweetener, only banana & cinnamon for my ‘sweet tooth’. Delish!

INGREDIENTS:

  • 3 ripe bananas, mashed
  • 1 TBS teaspoon ground cinnamon
  • ¼ tsp sea salt
  • ½ cup unsweetened shredded coconut
  • 2 cups millet flakes
  • 2 TBS cacao nibs

METHOD:

Mix all ingredients well. Cover bowl with that mixture and refrigerate for about one hour.

Preheat the oven to 175 C and line baking tray with parchment paper.

Scoop the batter and place on the tray. Bake for about 12-15 minutes.

Leave on the side to cool. Store in air tight container in the fridge for up to 4 days.
