Apple pancakes

Rainy day off is fantastic for lazy breakfast. There is no need to rush and you can just sit and enjoy as long as you want too. gf pancakes 1 INGREDIENTS:

  • ½ cup gf flour (I used gram flour)
  • 1 tsp baking powder
  • pinch of pink salt
  • 1 tsp cinnamon
  • ½ tsp vanilla powder
  • 2 TBS maple syrup
  • 3 tsp flaxseeds in ¼ cup warm water
  • ¼ cup apple sauce
  • coconut oil for frying

METHOD: If you have no apple sauce, firstly make it form scratch. Wash and peel one big apple and grate it. Transfer to small saucepan and simmer with 1 TBS of water until soft. When ready, blend it and you have apple puree. In large bowl, mix all dry ingredients and in another one, all wet. Then fold wet ones into the dry mixture and mix well. Heat up coconut oil on frying pan. Use tablespoon to scoop the batter onto the pan. Fry for about 3 minutes on each side. Sprinkle with ground almonds and voilà! gf pancakes 2
