Buckwheat dutch baby with chia jam & caramelised fruits

It does not look so bad, do you think?!

I know that ‘dutch baby’ should look more beautiful than this one I made. But hey, that one is a little different… It is made from buckwheat flour.

Serves 2


  • 2 eggs
  • ½ cup any nut milk
  • 2 TBS + 2 tsp buckwheat flour
  • 2 TBS + 2 tsp any other flour like white spelt, kamut
  • 2 TBS agave nectar or maple syrup + 1 TBS for caramelised fruits
  • ¼  tsp pink salt
  • 2 TBS coconut oil
  • crashed cloves
  • cinnamon
  • chia jam (prepared earlier; you can find the recipe here – make without sweetener, just nut milk and chia seeds)
  • toasted pecan pieces


Preheat the oven to 200 C and prepare iron cast pan or round baking dish (about 22 cm).

Mix all ingredients well despite of coconut oil.

Melt 1 TBS of coconut oil in the pan, pour the mixture and bake for about 17-20 minutes.

In the meantime, wash and cut pear and large apple into small chunks. Melt another 1 TBS of coconut oil in the pan, toss pieces of fruits, add sweetener and spices. Stir every few minutes until softened.

When the pancake is ready, take it out and transfer onto the plate. Top with caramelised fruits, chia jam and toasted pecans and enjoy!
