Preparing something in advance when you know you will be busy and will have no time to cook, is very useful. In that way you can still have something healthy to eat.
I think that vegan burgers are great idea in that case. It does not take long to make them and then I have two dinners and lunch at work.
Makes about 14.
INGREDIENTS for burgers:
- 2 boiled and mashed sweet potatoes
- 2 cups of cooked and mashed black beans
- about 3 stalks of spring onion, finely chopped
- 4 pressed garlic cloves
- pink salt
- 2 TBS toasted sunflower or sesame seeds
- 1 tsp cumin
- 1 tsp corriander
- 1 TBS nutritional yeast
- 2 TBS buckwheat flour
- 2 TBS ground flaxseeds
Preheat the oven to 190 C and line baking tray with parchment paper.
Mix all ingredients in a large bowl. If the mixture is too sticky, place for abut 10-20 minutes in the fridge.
Shape the burgers and place on the baking tray. Bake for 20 minutes, gently turn then over and bake for further 10 minutes (until dry on the outside and golden brown).
INGREDIENTS for dressing:
- 1 TBS lemon juice
- 1 TBS apple cider vinegar
- 1 TBS rice syrup
- 2 TBS tahini
- 1 TBS extra virgin olive oil
- 1 TBS water
Mix all ingredients well.
Serve with GF buns, salad and dressing.
