I make banana bread quite often as it is great when you want something sweet. If you add some nuts and superfoods, you will be satisfied with healthy and nutritious snack.
- 3 mashed bananas
- 2 cups wholegrain spelt flour
- 1 tsp baking powder
- ¼ cup rapadura sugar or coconut palm sugar
- ¼ tsp baking soda
- ½ tsp sea salt
- 1 TBS chopped pecans
- 1 TBS cacao nibs
- 1 TBS chia seeds
- 1 TBS cinnamon
- ½ cup any nut milk
- ½ cup melted coconut oil
Preheat the oven to 175 C and prepare loaf pan.
Mix all dry ingredients in large bowl and wet in separate bowl. Then add wet ingredients to dry and mix well.
Transfer to the pan and bake for about 40 minutes or until tester inserted comes out clean. When ready, leave to cool.
