French toasts with caramelised apple & cinnamon

I like going to bakery nearly at closing time as the prices of what is left are reduced. And you can buy amazing things for nearly nothing – if they are not already sold 😉

Yesterday I bought two croissants as there was great idea for Saturday breakfast in my head.

INGREDIENTS for toasts:

  • 2 croissants, cut in 1 cm slices
  • 1 egg
  • ¼ cup nut milk
  • ¼ tsp vanilla powder
  • 1 TBS dark agave syrup
  • pinch of pink salt
  • cinnamon for sprinkling
  • coconut oil for frying

INGREDIENTS for caramelised apple:

  • apple
  • coconut oil
  • 1 TBS dark agave syrup


Whisk egg, milk, vanilla, agave and salt in a bowl. Heat coconut oil on the frying pan. Place each slice of croissant in the bowl with egg mixture – soak both sides, and transfer onto the frying pan. Fry slices for about 2 minutes on each side or until golden brown.

In the meantime, peel apple and cut into medium size pieces. Heat up a little oil in a small saucepan, add apples, cover and simmer for few minutes. Then add agave nectar and simmer for 2 more minutes.

When toasts and apple are ready, serve together when still warm. Remember to sprinkle with cinnamon. Enjoy!
